Just finished my first week of Field Based Training and it was a lot of fun. However, our new site is extremely hot and the power goes off pretty much every day. We had training this week on micro-cuencas (micro watersheds) as well as non-formal education and behavioral change. THe best part of the week was a hike that we took up Cerro El Cacao to visit a couple of micro-cuencas. A really old Honduran man (Don Fidel) is in charge of taking care of these water sources and he took us up the mountain. It was really beautiful and I learned a lot about taking care of watersheds and the problems of watershed management in rural Honduras.
However, the real message of this post is all about FOODZ. Here is a list of my top ten favorite foods in Honduras (so far):
1. Baleadas. Hands down, best food out there. It’s basically a big floury sweet tortilla with refried beans and mantequilla inside. Mantequilla is like Honduran sour cream. You can also put a fried egg and hot sauce inside. I would eat these every day but sadly, I don’t cook for myself.
2. Catrachas or catrachitas: Fried tortilla with refried beans and cabbage as well as chizmol (pico de gallo) on top. SO GOOD. I also put hot sauce on these.
3. Enchiladas: Fried torilla, open faced with shredded chicken and pico de gallo on top. You can also add cabbage (repollo) and cheese. I also put hot sauce on this.
***AS you may have realized, most foods here involve tortillas and beans (especially fried and refried versions of all of these).
Other favorites of mine include:
Jugo de Maracuya(passion fruit juice), mamones (a type of sour fruit..this word is also a bad double entendre), and choco-bananos (Frozen bananas covered in chocolate).
OM NOM NOM!
I hope that everyone is doing well in the US! I would love to hear from you guys…feel free to ask my mom for my email address or send me a letter at my address listed above. I promise to write you back if you send me snail mail!

Dear Carly, So glad you are enjoying your great
experience. The food sounds okay- for you. I hope
that you are seeing beautiful plants, birds and odd
creatures. I have two books about H and really think you could write one after your time down there and all of the hands on experiences. Love,
G’ S and G’L.
